SAMOSA INDIANI CON PISELLI E PATATE

Oggi vi propongo la ricetta di un aperitivo o secondo piatto indiano che ho assagiato a Piazza Vittorio a Roma in un fast food indiano con la mia amica Agnese, ho trovato la ricetta su youtube.
Ecco il "link", che potrà esservi utile per capire il procedimento per realizzare la forma dei samosa.

Ingredienti per l'impasto:
350 g farina
1/2 cucchiaino di sale
1 cucchiaino di semi di coriandolo
1 cucchiaino di curry
1/2 cucchiaino di paprika forte
3 cucchiai di olio extra vergine di oliva
100-150 g di acqua


Preparazione dell'impasto:
In una ciotola fare una fontana con la farina e versare nel centro l'olio, l'acqua, il curry, la paprika forte, i semi di coriandolo, e impastare il tutto ottenendo una palla, porre l'impasto in un sacchetto per alimenti e far riposare per 25-30 minuti.


Ingredienti per il ripieno:
4 cucchiai di acqua calda
2 cucchiaini di semi di coriandolo
600 g di patate bollite
10 cucchiai di piselli (cotti in una padella a parte con cipolla e pancetta e un po' di peperoncino)
sale quanto basta
2 cucchiaini o 2 e 1/2 di curry
1 cucchiaino di garam masala
1 cucchiaino di paprika forte
10 foglie di prezzemolo
Peperoncino a piacere... (assaggiare il ripieno, per verificare se è abbastanza piccante)



Preparazione del ripieno:
Tagliare a quadratini le patate bollite e versare l'acqua calda, aggiungere i semi di coriandolo, il curry, il garam masala, la paprika forte, le foglioline di prezzemolo ed il peperoncino e amalgamare il tutto.
In una padella mettere un cucchiaio di olio e quando sarà ben caldo aggiungere  1/2 cucchiaino di semi di coriandolo, poi versare tutto il ripieno e cuocere per 5 minuti a fuoco basso per amalgamare bene il composto e per far asciugare il ripieno.
Prendere l'impasto che ha riposato per 25 - 30 minuti, prendere una pallina un po' più grande di una noce, stendetela e ricavate un ovale di pasta, tagliate a metà nella parte più stretta.


Ricavare dei coni: prendere il lato tondo e bagnarlo con un po' di acqua e far aderire il lato opposto, unendo e schiacciando con i polpastrelli l'impasto fino al fondo, prendere il cono e riempirlo con 2 cucchiai di impasto, schiacciare un po' con la dita e sigillare la parte superiore con un po' di acqua e schiacciando con le dita; piegare la base del cono e posare il samosa. 
Ripetere questo procedimento fino al termine dell'impasto.


Friggere in olio bollente fin quando saranno dorati da entrambi i lati, scolare su carta assorbente e... ora sono pronti per essere mangiati, meglio quando sono ancora caldi :-D.

Preparing the filling:

NOCI DOLCI O ZAUBER NUSSE

Qualche anno fa mio zio mi ha regalato una piastra per realizzare dolci tunisini.


Ingredienti :
500 g di farina
1/2 bustina di lievito
200 g di burro ammorbidito
150 g di zucchero a velo
3 uova
Con queste dosi si ottengono circa 80 noci.

Preparazione:
Lavorare lo zucchero con il burro, aggiungere la farina, le uova e gli aromi.
Lasciare riposare mezz'ora in frigo.
Riscaldare lo stampo sul fornello a fuoco vivace, allontanare lo stampo dal fornello e spennellare con del burro fuso le cavità e la parte superiore dello stampo. Questa operazione deve essere ripetuta ogni volta che si mette l'impasto nelle cavità.
Mettere una piccola parte di impasto circa 5/6 grammi  all'interno di ogni stampino, io per far prima, ho fatto un rotolino delle dimensioni di un grissino e ho tagliato dei pezzetti di grandezza lievemente superiore a quelle di una nocciola, chiudere lo stampo e premere 3-4 minuti per parte, su fuoco basso.


Il tempo esatto di cottura non lo so, direi 5 minuti a fuoco medio, io vi consiglio di aprire ogni tanto lo stampo per controllare la cottura.






[La piastra si può trovare, con un po' di fortuna in qualche sagra di paese, un'amica è riuscita a trovarla, in alternativa potete usare la piastra per Waffel, ne vendono alcune con degli stampi intercambiabili simili a quelli delle noci].

BARE AL CIOCCOLATO DI HALLOWEEN

Le bare di Halloween sono dei dolcetti di pan di spagna farciti con marmellata o nutella, bagnati con dell'alchermes per dolci, per dare la suggestione del sangue e ricoperti di glassa al cacao.
Si può sostituire il liquore con del succo di mirtillo, per renderli adatti ai bambini.

Ingredienti:

Pan di spagna (fatto in casa o comprato)
Alchermes
Nutella
Marmellata

Glassa al cacao:
Cacao
Zucchero al velo
Acqua

Preparazione:

Per preparare le dolci bare di Halloween, disegnate la sagoma di una bara su un cartoncino, che abbia le dimensioni riportate nel disegno qui sotto.


Ritagliate dal pan di spagna almeno 6 sagome seguendo il disegno del cartoncino, poi tagliatele in senso orizzontale e farcitele.
Ricomponete le sagome delle bare e sporcatele leggermente di alchermes, dopodiché spalmatele con un leggero velo di marmellata (in modo che successivamente la glassa aderisca alla superficie).


In una ciotola preparate la glassa al cacao, con lo zucchero al velo, il cacao amaro in polvere e poca acqua bollente , giusto quanta ne servirà per formare una glassa cremosa (non liquida).
Ponete le sagome su di una griglia, e poi versatevi sopra la glassa al cacao facendola colare su tutti i lati, e cercando, con una piccola spatola o coltellino a lama liscia, di far si che tutte le superfici si ricoprano uniformemente e lasciatele asciugare.
Ritagliate su un foglio di carta una piccola croce, ponete il foglio con ritagliato sulla bara di cioccolato e spolverizzate con dello zucchero al velo, ripetete il procedimento con le restanti barette. Ponetele in un piatto con granella di nocciole o zucchero di canna grezzo e servitele.
