SAMOSA INDIANI CON PISELLI E PATATE

Oggi vi propongo la ricetta di un aperitivo o secondo piatto indiano che ho assagiato a Piazza Vittorio a Roma in un fast food indiano con la mia amica Agnese, ho trovato la ricetta su youtube.
Ecco il "link", che potrà esservi utile per capire il procedimento per realizzare la forma dei samosa.

Ingredienti per l'impasto:
350 g farina
1/2 cucchiaino di sale
1 cucchiaino di semi di coriandolo
1 cucchiaino di curry
1/2 cucchiaino di paprika forte
3 cucchiai di olio extra vergine di oliva
100-150 g di acqua


Preparazione dell'impasto:
In una ciotola fare una fontana con la farina e versare nel centro l'olio, l'acqua, il curry, la paprika forte, i semi di coriandolo, e impastare il tutto ottenendo una palla, porre l'impasto in un sacchetto per alimenti e far riposare per 25-30 minuti.


Ingredienti per il ripieno:
4 cucchiai di acqua calda
2 cucchiaini di semi di coriandolo
600 g di patate bollite
10 cucchiai di piselli (cotti in una padella a parte con cipolla e pancetta e un po' di peperoncino)
sale quanto basta
2 cucchiaini o 2 e 1/2 di curry
1 cucchiaino di garam masala
1 cucchiaino di paprika forte
10 foglie di prezzemolo
Peperoncino a piacere... (assaggiare il ripieno, per verificare se è abbastanza piccante)



Preparazione del ripieno:
Tagliare a quadratini le patate bollite e versare l'acqua calda, aggiungere i semi di coriandolo, il curry, il garam masala, la paprika forte, le foglioline di prezzemolo ed il peperoncino e amalgamare il tutto.
In una padella mettere un cucchiaio di olio e quando sarà ben caldo aggiungere  1/2 cucchiaino di semi di coriandolo, poi versare tutto il ripieno e cuocere per 5 minuti a fuoco basso per amalgamare bene il composto e per far asciugare il ripieno.
Prendere l'impasto che ha riposato per 25 - 30 minuti, prendere una pallina un po' più grande di una noce, stendetela e ricavate un ovale di pasta, tagliate a metà nella parte più stretta.


Ricavare dei coni: prendere il lato tondo e bagnarlo con un po' di acqua e far aderire il lato opposto, unendo e schiacciando con i polpastrelli l'impasto fino al fondo, prendere il cono e riempirlo con 2 cucchiai di impasto, schiacciare un po' con la dita e sigillare la parte superiore con un po' di acqua e schiacciando con le dita; piegare la base del cono e posare il samosa. 
Ripetere questo procedimento fino al termine dell'impasto.


Friggere in olio bollente fin quando saranno dorati da entrambi i lati, scolare su carta assorbente e... ora sono pronti per essere mangiati, meglio quando sono ancora caldi :-D.

10 tablespoons of peas (cooked in a separate pan with onion and bacon and a bit 'of chilli) 
salt to taste 
2 teaspoons or 2 and 1/2 curry 
1 teaspoon garam masala 
1 teaspoon paprika strong
 10 leaves of parsleyPepper to taste ... (Taste the filling, to see if it is hot enough)

Preparing the filling:

Cut into squares boiled potatoes and pour hot water, add the coriander seeds, curry powder, garam masala, paprika strong, parsley leaves and pepper and mix well.In a pan, add a tablespoon of oil and when it is hot, add 1/2 teaspoon coriander seeds, then pour all the filling and cook for 5 minutes over low heat to blend the mixture well and to dry the filling. 
Take the dough has rested for 25 to 30 minutes, take a ball a little 'bigger than a walnut, roll it out and cut an oval of dough, cut in half at the narrowest part.Extract of the cones: Take the round side and sprinkle with a bit 'of water and adhere the other side, joining and pressing with your fingertips until the mixture at the bottom, take the cone and fill it with 2 tablespoons of dough, squeeze a little 'with the fingers and seal the top with a bit' of water and squeeze with your fingers, bend the base of the cone and place the samosas.Repeat this process until the end of the dough.
